How to read the knife rating on Na nože

What the knife rating means
At the end of every Na nože episode, Martin Novák gives the restaurant a knife rating. The scale runs from zero to five, and it is a quick way to sum up the state the place is in once he leaves. Zero means almost nothing changed, or that the place collapsed in the meantime. Five knives is the highest mark, reached by only two restaurants across five seasons. Everything in between is a full spectrum, and each step says something.
Season one had no scores
One thing confuses new viewers: the restaurants from season one have no knife count next to them. It is not a mistake, the knife rating was not yet used on the show. Martin reworked places like Bella Italia in Šamorín and Dvor u Sedliaka near Smolenice just as thoroughly, simply without a closing score. For those, our map shows the status (open or closed) and the Google guest rating instead of knives.
Five knives is a rare thing
A perfect score is genuinely exceptional. Across more than fifty episodes only two restaurants earned it, and both are still open.
Tri groše in Ľubietová was drowning in tweezer cuisine and hour-long waits that were straining the owners' relationship. Martin stripped away the whole complicated menu, put a grill and a smoker on the terrace, and brought them back to honest food. The result convinced him enough to award five knives.
Oravský Zrub in Nižná is a different case. Here the food was already excellent before Martin arrived, he said he had not eaten better sviečková even in Prague. The problem was that the place sat empty at lunch and lost hundreds of euros a day. The five knives here were not for a new menu, but for a quality kitchen finally finding its way to customers. That shows the knives are not rating taste alone, but the overall health of the business.
And at the other end: zero knives
Zero is a harsh verdict, handed out when an owner cannot or will not hold on to the change. In season four two places got a zero, and both are closed today. Bufet Jahodná near Dunajská Streda drowned in debt and filth, and Martin shut it on the spot. When he returned a month later, nothing had changed. Koliba Burger & Pizza Rica in Martin was given a new concept and the name Chalúpka, but a month later it had already closed. Zero knives, then, is not about one bad dish, but about a place with no will to carry on.
The number versus the shift
When watching the show it is worth keeping one thing in mind: more telling than the absolute number of knives is the shift. A place that climbs from total chaos to a solid three knives may have done more work than one already close to the top at the start. The three knives for VEG in Poprad, which was drowning in debt and a gloomy cellar, are in fact a small victory.
