Koliba Burger & Pizza Rica

The restaurant & setting. Martin, on the slopes of the Martinské hole mountains, at the Martin to Stráne bus terminus where cyclists and via-ferrata hikers gather in summer. A wooden koliba (mountain chalet) stands here, still known to most locals by its old name Koliba pod Hoľami. The current owners took it over two years ago, in November, and the chalet has since become a confusing mash-up: the sign over the door reads "Koliba Burger & Pizza Rica." "The car park is full, it's always full, and we're sometimes empty," the owner admits straight away.

The people. The place is run by a couple: Martina "Maťa" Ričovská, a former practical nurse from the Martin hospital who wanted a change and a rest after COVID ("but it didn't work out"), and her partner Ľubo, a self-taught cook ("I dropped out just before my exams," recipes "from the internet"). They've been together 17 years and have two kids. Their kitchen lifeline is Majka (Márika), a cook with thirty years' experience, and the floor is worked by Katka, Helenka, Monika and other girls. "Maťka is the one who thinks, and Ľubo is the one who acts," one of them sums up.

Why they called Martin. The place doesn't know who it is. They started as a purely Slovak kitchen; after the season it "stopped working," so Ľubo started "groping around": let's try pizza, let's try burgers, and produced a menu where nothing matches: the listed prices don't apply, they're rewritten elsewhere, nobody weighs the portions. Every month they top up the running costs from a second business, and Maťa is already seriously thinking she'll just hang up a "closed" sign one day.

The first visit. Maťo sits down with the tatty old menu and hits a wall at once: the burger-pizza at 9.80 is wrong, the "Hell" pizza at 10.30 is wrong. "We haven't had a single price yet that's what it should be." The garlic soup passes ("not even Dracula will look at me today"), but the pizza is a disaster. "If Italians saw this, it's like a pancake… Christmas wafers, basically," the dough "tortured and rolled flat." The hamburger? "It tastes like a burnt sausage; forensic technicians would have a field day here." The saving grace is the homemade plum dumplings: honest, well-seasoned, 8.5 out of 10. "Why don't they make this? Why do we keep playing at something we can't do?"

The diagnosis. The root problem is Ľubo's stubbornness and impulsiveness. "What's hurting this restaurant is maybe your stubbornness, are you some kind of Napoleon?" Making pizza under the Martinské hole is "utter nonsense" when there are dozens of pizzerias and burger joints around, but proper Slovak cooking, "just one," is precisely their opening. Maťa finally takes off the rose-tinted glasses: "I'd honestly have closed it today." In a fit, Ľubo suddenly throws out the pizza and burgers "from one day to the next, bang, done," exactly the impulsive decision-making that got them here.

The reset. Maťo sets a cook-off: each cook makes one dish they believe in. Ľubo does trout with spinach and crushed potatoes, Majka does sour potatoes with mushrooms and a stuffed pastry. Majka jots down her grammages for costing as she cooks: "that's the years of experience." Her sour stew wins hands down, while Ľubo can't even calculate the price of his own dish ("I added it by eye"). The lesson is plain: you're in business to earn, and you're not earning because you don't cost anything out. Maťo hands the kitchen to Majka: "She can do it better than you." Ľubo takes it badly and a row erupts, but that evening the couple walk up the Martinské hole together for the first time: "a dream come true."

New concept & menu. Pizza and burgers go for good and the place gets a new name: Chalúpka (The Cottage). A wooden gate into the forest is added, matching place settings with flowers, and a daily-special chalkboard instead of the broken menu. The new menu is purely "chalet," honest and homemade: a classic mushroom soup, a creamy bean soup with langoš, a baked potato done up modern, homemade meatloaf with potato purée, and for the sweet finish pear pierogi and steamed dumplings with jam. "If you make good honest homemade food, you'll always pull people in for it."

The big night. The new Chalúpka opens and Maťo hands the whole kitchen to Majka: "from this moment on it's all on you." But Ľubo has to leave mid-prep: his daughter Miška has a fever of 39.4 and he drives her to the ER. Despite her nerves Majka holds the kitchen "like a rocket," yet the floor descends into chaos: the till double-charges one table, orders don't go through, the langoš runs out, and "every single table went wrong." The food that does reach the plate, though, the guests praise: "I had pear pierogi for the first time and they were excellent, the soup was really super." "Hats off, she was left in it alone and pulled it off with flying colours," Maťo allows. The guests' bill is waived.

One month later. Maťo can't reach Ľubo for several days, so he gets in the car and drives to Martin. Darkness at the gate, emptiness inside, tables gone, the place already has a new owner. Through Majka, who has meanwhile "finally cooking" in a new eight-hour job, he reaches Maťa. She explains it bluntly: "One fine day I told myself I'm done, I won't be a weekend slave here." She's gone back to the hospital, Ľubo delivers fruit and vegetables and is taking his truck licence. They're happier, they take the kids to the ice rink, their son is doing better.

Verdict: Within a month of the restart the restaurant closed and passed to a new owner. The Chalúpka concept didn't survive. With an ending like that there's nothing to reward with a grade in the venue's favour: 0 knives. "A great shame about the restaurant in Martin; they'd got off to a good start; it pains me they didn't do more for it. But that's life too," Maťo concludes, ultimately wishing the family well as life moves on.
