The restaurant & setting. Dvor u Sedliaka is a small farmhouse-style restaurant in Smolenice, right below the popular tourist landmark of Smolenice Castle. It has been open for two years and the owner runs it as a tenant. The name and the whole concept point to plain country cooking, where people eat their fill and leave with full bellies. When Martin first walks in, he is hit by the stale smell of cigarette smoke from a poorly ventilated room, dust and cobwebs everywhere and an interior overcrowded with decorations that nobody has repainted in ages.
The people. The place is carried by its owner and cook Mária Juričeková, an exhausted woman with no husband but three daughters and a little grandson. In the kitchen she has two loyal right hands: Stanka, who has only been cooking for a short time, since summer, but keeps a cool head and an overview, and Vlasta (Vlastička), who is in charge of the halušky and the desserts. Young Veronika, whom Mária treats like her fourth daughter, helps in service together with partners Iveta and Matúš. Mária also has a daughter, Veronika, who runs her own pizzeria but cannot help at the restaurant because the deep fryer gives her severe migraines. The whole team works like a family and is crushed by roughly 20,000 euros of debt.
Why they called Martin. After two years of grinding seven days a week from morning to night, Mária is running on empty and the business is frozen in place. Covid dragged it under, the debts piled up and Mária just sprints with no goal: „every day work, work, work". She is worn out, barely sees her children or her grandson, and it is high time someone offered a helping hand before she burns out completely.
The first visit. Martin orders across the menu and comes away torn. The schnitzel from the menu is excellent, „just like at grandma's", the roasted potatoes and ribs too, and the meatballs are homemade. But the broth is seasoned with Vegeta, which in Martin's view has no place in a professional kitchen, the bryndza halušky are dry and parched, the Viennese onion on the meatballs has gone soggy and sticks like plasticine, the roasted pork knuckle is so tough that a knife will not even cut it, the cabbage is too sour, and grandma's pulled-meat dish is burnt to the point of bitterness. On top of that come huge portions at laughable prices and every single plate is chipped and battered. „This is my biggest disappointment," Martin concludes over the burnt dish.
The diagnosis. Martin names the root of the problem: it is not just the food, it is the system and Mária herself. „You just keep going, Majka, there is a road and you sprint down it," with no goal, no delegating and no willingness to take advice. In the storerooms he finds a disaster zone, mess, food five years past its date and even a bottle from 1983, and he warns that such things can cost a 5,000-euro fine. At first Mária makes excuses, but Martin holds his line: „I will hold up a mirror to you." Stanka tells the boss to her face what she has long thought, that the place is overcrowded and messy. Mária takes it hard, admitting she fell into a pit and how many times she has already wanted to give it all up.
The reset. Martin first buries Mária's dream of pizza: Smolenice, with three thousand inhabitants, already has four pizzerias and a fifth would not survive, which her daughter Veronika, who in his opinion makes the best pizza in town, confirms. Instead he has a large skip brought in and Mária finally clears out a pile of useless junk and antiques. He sends the team to a wellness centre and massages at a chateau in Pezinok as a reward, while the youngsters help with the makeover. The kitchen gains a combi oven and a dishwasher that save hours of manual labour, plus a new POS system with a card terminal and stock tracking, since until then the place only took cash. Martin and his team remodel the interior all night long.
New concept & menu. The concept stays a farmhouse yard, only carried into the 21st century, nicely lit, clean and cosy. Since pizza is off the table and Veronika cannot go near the fryer, Martin bets on the podpecník, a Slovak equivalent of pizza rooted in home cooking, which can be packed into pretty boxes and delivered. The new menu is modern yet local: smoked meat and a Russian egg as starters, beef-brisket broth, marrow bone for the men, beef sirloin, a chicken roulade stuffed with meat farce, pangasius fillets and classic desserts, a vanilla éclair, curd-cheese balls and ducat buns. The menu resonates with the team a hundred percent.
The big night. Before the big night a string of complications piles up: the chicken thighs arrive without skin, so the roulade has to be improvised, frozen and broken meat turns up instead of chilled, and an ordinary head lettuce stands in for the romaine. Both Mária and Stanka take it hard, ashamed that nobody checked the delivery, and the youngest team member nearly unties her apron and walks out. On top of that a pipe bursts and floods the kitchen. Martin fires the team up („We are going to win!") and the evening gets going. The éclairs fail, they turn out greasy, but the team pulls together and the kitchen, which Martin did not believe would put out food at all that afternoon, suddenly works. The guests praise the sirloin and the creamy podpecník, and Martin slowly hands the sceptre to Mária so that she can reign over her own kitchen.
One month later. A classic one-month return does not happen in this finale, but in the closing scenes Martin delivers an honest verdict to the team right there on the spot. He reminds Vlasta to protect her hands for those wonderful ducat buns, hails Stanka as a great pillar of the kitchen and Mária as the heart and soul of the place, which he believes will be the most renowned kitchen in the area within a month. The closing titles tell us that after Martin left, great things began happening at Dvor u Sedliaka: the restaurant is full every weekend, people come for dinner too, the sirloin and the bryndza podpecník are the favourites, Veronika joins full-time from April, the place closes one day a month for rest, and Mária finally has time for her grandson.
Verdict: The closing mission of the first season ended successfully. Martin leaves a restaurant that gained a new system, a modern kitchen, a cleared-out space and a confident boss who finally commands her own kitchen. The first season of the show does not close with a knife rating, so Dvor u Sedliaka does not take home a number of knives, but an honest restart and a team that pulled together under pressure and came to believe that better tomorrows are possible.
