The restaurant & setting. We're in Nitra, at a restaurant-with-rooms that proudly calls itself Rybárska bašta ("The Fisherman's Bastion"). The owners bought it together with the hotel (13 rooms) five years ago, and the name promises a fishy kingdom by the water. On arrival, though, Martin finds that while the river Nitra runs nearby, there is no "by the water" here at all. Instead there's a prison right across the road, a cemetery and the city police next door. "What fisherman's bastion, this is a brasserie," he thinks at the very door, greeted by a poster of Jack Sparrow.
The people. The place is run by Jana, the operations manager, who's been there under a year; the owners (two men who introduce themselves as Stanley/Stanislav and Matúš) are afraid to raise prices: they sell the lunch menu for €6.90 and subsidise the restaurant from the accommodation, so every month they slide into the red. The kitchen is ruled by Zuzka, an "ordinary cook" who is in fact a trained seamstress, cooks old-school canteen classics, and openly admits she dislikes cooking fish, in a fish restaurant. Around her are three secondary-school kids, among them 17-year-old Simon Hlavaj, son of one of the owners, who teaches himself to cook from YouTube and burns to do real gastronomy.
Why they called Martin. The restaurant has been losing money for years, guests don't come and the reviews are brutal: "Absolutely don't recommend, the service is a total disaster." The owners don't know where they're going wrong, the economics won't let them hire a professional head chef, and both Jana and Simon hope Martin will bring "fresh air" and show them a direction.
The first visit. Martin orders across the menu and the à-la-carte list with its bizarre names (Gypsy Village, Sauté of the Bornak Execution, The Gamekeeper's Wife), and the disaster is impossible to miss. The soup is "warm water, unsalted" with dried Vegeta floating on top and zero flavour. Three different dishes share a 90% identical ketchup base, the fish reeks of the freezer's third drawer, the rice is cold and undercooked, the pizza burns. "In a Chinese prison this wouldn't be average," Martin snaps when the owner calls the food "kind of average." Confronting the owners, one line says it all: the cooks here are effectively being taught to cook by a seamstress.
The diagnosis. Martin names the root cause bluntly: the place "has neither head nor tail," with three children and a seamstress in the kitchen, and an owner who himself says the food is sometimes good, sometimes not. A ship with no captain and no map. He shows them the filthy grill and the grease, "stick your finger in here," yet takes the boys' side: "it's not their fault, no one ever showed them." Without the right people and the right cooking, the restaurant goes nowhere.
The reset. The emotional turn comes through Simon: the next day Martin takes him shopping and cooks alongside him, teaches him the base of a proper risotto and mushrooms, knocks on the meat that "sings because it's happy it's hot," and gifts him his own set of knives, telling him every cook should own his knives. He also brings reinforcements: his former sous-chef Ivan, who'll stay a full month and mentor Simon, and manager-sommelier Zdenko. He secures €2,000 from Tesco for quality ingredients. Zuzka, who refuses to learn "from a student," is left to her honest work, but the team's limits are now plain to see.
New concept & menu. Martin pushes through a rebrand he's been sure of from the first moment: Rybárska bašta becomes Brasserka, a Slovak-ised "brasserie," "a strong word people will remember" and one Nitra doesn't have. The new card breathes French simplicity: duck-liver paté with cranberries and sourdough bread, onion soup with cheese, bouillabaisse, black risotto with cuttlefish and grilled octopus, fried cod with pea purée and homemade fries (fish and chips), coq au vin, and Crêpes Suzette to finish.
The big night. The gala starts badly: processes fail, the kitchen "tickets won't print," the boys don't know what to do, and Martin watches the team's effort dissolve: "chaos, stress and panic." But Ivan takes command, starts calling out the orders and pushing the boys forward. The Tetris of missing pots and gastro pans gets handled, the food starts going out and the guests are delighted: 48, then 60 desserts are plated. "Hats off to you two," Martin tells Zuzka and Simon. The owner honestly admits the bad start was their own fault.
One month later. A month on, Martin returns to Brasserka and finds a transformation: new technology, HACCP boards, new plates, proper service, and a new colleague, Sebastián, in the kitchen. Simon surprised him most: he and Ivan phoned a lot, even in their free time, and Simon did everything he was told. Martin orders the bouillabaisse, beef cheeks à la bourguignon (which he "didn't even leave on the plate"), cauliflower purée and Crêpes Suzette. Everything lands.
Verdict: 4 knives. Martin leaves satisfied, "you've truly earned this," and rates the place 4 knives: the Brasserka crew gave the result their maximum, even if a long road still lies ahead. The score belongs above all to Simon's drive and to the owners' willingness to invest in what their employees advised.
