The restaurant & setting. Plantáž Bistro is a small, cosy vegan bistro tucked into a courtyard in the centre of Martin, decorated with living plants. Everything is cooked from purely plant-based ingredients, the food is packaged sustainably and even the soaps are bought cruelty-free. The name „plantáž" (plantation) nods to the green, plant-based concept the owners use to spread awareness rather than to cash in. The venue is tiny, the kitchen cramped, and Martin could barely find it when he arrived in town.

The people. The bistro is run by two business partners who met through vegan activism on social media: Markus, the chef and hot-tempered „fire", and Peťo, the calm „stability" who is meant to run operations. Markus's two sisters, Natálka and Majka, also work here in service and the kitchen. Two cooks, Oľa and Nadia, are sisters who fled the war in Zaporizhzhia in Ukraine; at first Oľa spoke not a single word of Slovak and the vegan kitchen was just a hobby to her. All the while the business is crushed by roughly 100,000 euros of debt owed to banks and friends.

Why they called Martin. The owners dream of building a slick vegan bistro, but it is falling apart in their hands: empty tables, exhaustion and above all constant fights between Markus and Peťo. One pushes, the other stays silent, there are two captains on the ship and the team has no idea who is in charge. „We were living in a bubble and today it burst," they admit that this is their last chance.

The first visit. Martin, a self-described „unique carnivore", orders across the menu and it is a string of disappointments. The vegan duck is bitter, burnt and has the texture of a sponge, „the most disgusting thing I have eaten here". The steak is like a dish sponge, flavourless and crowned with a pointless sprig of rosemary. The pad thai is overcooked mush because someone boiled the noodles in sauce instead of stir-frying them. The pseudo-tuna sandwich uses old, two-day-old bread as hard as breadcrumbs. Almost everything is underseasoned. „I would get a better sandwich at a petrol station," Martin concludes, and he understands why the place is half-empty.

The diagnosis. Martin names the root problem: it is not the food, it is the leadership. „You cannot have two captains on one ship either." Markus and Peťo squabble like children in a sandpit over who is in charge, and that tension trickles down onto the whole team and the guests. Martin praises the staff who keep the place afloat, but states plainly that it is the pair of owners who are failing. Under pressure they agree: Markus will cook and run the kitchen, Peťo will take over the whole management and finally has to become the boss. The youngest waitress takes it all so personally that she has to step out to catch her breath.

The reset. Martin bets that a vegan bistro must also win over meat-eaters. He prepares a new burger and a vegan „goulash" and takes them to the hunters of Jasenská dolina, deliberately not telling them the food is meat-free; they love it so much they would eat like this for half a year. As his ace in the hole Martin brings in food blogger Maťo Pico, „Martin meeting Martin in Martin", to help with marketing and a video vlog showing just how tasty the food is. He also has a new prep kitchen built one floor up, with a shower and room for prep and desserts, because downstairs in the cramped bistro there was no space to move.

New concept & menu. The concept stays vegan, but Martin cuts the meat imitations: no steak, no duck, just honest vegan food. The new menu features a kale croquette with sweet-potato purée and wild broccoli, baked aubergine with garlic mayonnaise, almond soup, mushroom paprikash and mushroom ragu, ratatouille with couscous, and finally tapioca with coconut milk inspired by Markus's love of Thai cuisine. During the tasting the team is moved to tears, and Markus receives a new chef's jacket as a gift.

The big night. Before the stress test Markus is meant to be the head of the kitchen, but just before service he steps out with the team for a three-minute cigarette and Martin finds an empty, bombed-out kitchen with the soup unblended. A sharp argument erupts: „You do not have to shout at me." The tapioca pudding overcooks, shards of glass end up in one dish and it has to be thrown out, guests wait up to an hour for pasta and the mushroom stew runs out. In the end the team pulls together, Martin jumps in to help with the peppers and the ragu, Markus goes to apologise to the guests, and Nadia saves the dessert on her own. The restaurant is full, the guests are happy, and Markus later admits that leaving the kitchen empty was not his best idea.

One month later. After Martin left, relationships at Plantáž calmed down. Markus now focuses only on the kitchen and cooks the daily menu, while Peťo runs operations his own way. Oľa and Nadia quickly learned Martin's recipes, but announced they want to return to Ukraine, because the war will last a long time yet and Oľa's husband cannot join them, so their notice period is running and the bistro will have to find new cooks. New customers have started coming in, the mushroom paprikash has become a bestseller, and Markus, often shut away in the prep room, films video recipes and posts them on social media, so from Thursday to Sunday the place is always full.

Verdict: The new mission at Plantáž ended successfully. Martin leaves a full restaurant with happy guests and the conviction that the bistro has earned a second chance: clear leadership, a fresh vegan menu without imitations and a team that pulled together under pressure. The first season of the show does not close with a knife rating, so Plantáž does not take home a number of knives, but an honest restart that could decide its survival.
