The restaurant & setting. Episode 2 of season 5 takes host Martin to Pezinok, a town known for wine and sport. Mavi's sits on the Starý dvor housing estate, right next to the public swimming pool, inside a sports hall. The name is the owners' names, MArek and IVana read backwards, plus an affectionate ending: Mavi's. The married couple opened it in June 2024, so it's been running about a year.
The people. Ivana is the owner, a kind soul who keeps friendly relations with the staff, can't bring herself to dock anyone's pay even when they're late or leave a mess, and lies awake every morning from 5 a.m. wondering who won't show up. Marek, her husband and co-owner, is a trained barman and waiter, more of a disciplinarian; frustrated, he withdrew and left everything to Ivana, a recurring source of arguments at home. The kitchen has two men named Peter: an experienced cook, Peter (30, nearly 10 years' experience), and an assistant cook, "Peťo 2," the partner of waitress Ľubica (28). Ľubica and her Peter have been together 12 years, have three children, and went through a rough patch: they lost their housing, and it was Ivana who helped them financially into a new flat. The business is propped up by the owners' parents; they take no salary, also cook lunches for kindergartens, and run a street-food stall on the side.
Why they called Martin. An empty restaurant at lunchtime. "I ask myself that every day," Ivana says when asked where the problem lies. An overflowing bin greets you before you even leave the car; inside, strewn crates, a trailing speaker cable, general mess. The menu is riddled with typos nobody ever bothered to fix.
The first visit. Martin orders a Važec-style pork dish with tagliatelle, potato pasta with parmesan, and other "classics." The cutlery is filthy, smears and dried-on residue, so he asks for a clean glass and clean utensils. The food is a disaster: rubbery cold bread, "worms" of pork, a broth with no aroma or taste, mushy noodles in a "creamoid blob," cold tomato. The peak is mould on the parmesan: Martin has the whole tub brought out, shows it to the cooks, and stops eating.
The diagnosis. "An absolute catastrophe." Martin gathers everyone and names the real issue: it isn't the food, it's the people: everyone here just doesn't care, with no discipline. Ivana is too soft; Marek has given up. An emotional moment: "This is my life, the one I've been building… and now I see I'm losing everything," Ivana breaks down. Martin pushes them to start the change with themselves. The couple agree that only by standing together, Marek's drive and structure plus Ivana's warmth, can it work.
The reset. In the test, cook Peter makes a risotto with no cream (so, not creamy) and pork tenderloin with bitter over-charred skin; Martin drills the basics. He then takes owners and cooks on a recon tour of nearby eateries: wings, salmon, pasta everywhere. The message: if four places around you serve the same thing, Mavi's won't stand out or draw new guests. The owners must be the "brains" that decide what makes sense. Martin brings in his team (including Soňa) and turns the sterile, "swimming-pool-like" interior into something cosy: new tableware, boards, atmosphere. The owners are moved to tears. He hands over costings and the freedom to adapt the dishes, plus €2,000 in vouchers for fresh ingredients.
New concept & menu. Martin presents a new seasonal (autumn) menu: buttered toast on sourdough with pulled smoked pork knuckle and honey-mustard dressing; a spinach velouté with a poached egg and a red-lentil soup with coriander and lime; a tomato, aged-cheese and rocket salad; papardelle with beetroot purée, aged cheese and almonds; and two desserts: carrot cake and potato dumplings with chocolate cream and pear chutney.
The big night. After a promising prep, the kitchen falls apart. Cook Peter can't handle the pressure; plates go out cold, guests wait two to four hours, some send food back, some leave. Ivana apologises and offers prosecco on the house. Marek clashes with Peter; Ľubica declares that if Peter stays, she quits. Martin steps in: there's no point hurling darts at one person: the whole team failed, owners to waiters to kitchen, and the owners are the ones who assembled that team. He urges no one to storm out. For the month he'll be away, he leaves them a mentor: his close colleague Filip.
One month later. The place is tidier and calmer. But the opposite of what they expected happened: Ľubica and her partner Peťo left, "we didn't find common ground." The experienced Peter, the one who melted down at the gala, stayed instead. He admits personal problems at home had bled into that night; he's since sorted them and started working on himself ("I owe it to Ivana, who helped me so many times"). This time Martin cooks alongside him. The verdict on the food: make the toast on browned butter, not oil; blend the soup more and watch the wilted coriander; the pork belly has great crackling but the potatoes and cabbage salad are clearly made in advance ("and it's not coleslaw, it's a cabbage salad"); the pasta is overcooked into one lump. "Miracles don't happen in a month. This is meant to be a starting line for you."
Verdict: Martin lets the owners decide who's earned the rating, and they agree it's Peter. Mavi's is awarded two knives. "I'm very happy. Take care, and above all, stick together."
