The restaurant & setting. We're in Ružomberok, below the UNESCO village of Vlkolínec, at Koliba pod Vlkolíncom. It isn't quite a traditional koliba: it's more modern, closer to a country farmhouse, with a handsome big hearth and atmosphere of its own; the premises even include a wellness area with a hot tub, pool and sauna world. The family has owned the building for 25 years but rented it out the whole time, and only now have they decided to run it themselves. The kitchen's centrepiece is a beautiful open-fire oven: „Do you know how many cooks would kill to have this in their kitchen?"
The people. Owner Matúš runs the place remotely from Bratislava, the whole restaurant is on camera („Big Brother is watching"). The head chef is Peter, „Peťo" (46), originally a mechanical engineer-technologist who „got stuck" to the trade twenty years ago and is now losing his energy for monotonous production-line work. The head waiter is Ivan Havzúk (37), who runs the floor. Operations are handled by Zuzana, „Zuzka", a Bratislava manager with no gastro background who only comes by roughly once a week. The kitchen also has Jakub, Saša and others (Bára, Andreja).
Why they called Martin. The restaurant is run „by remote control": the owners sit in Bratislava, the cooks are in Ružomberok, and a chasm yawns between them. Peťo is sick of the lunch menu and the assembly line („a drone on the conveyor"), the kitchen has turned into a canteen, and semi-finished products keep creeping in. Two worlds, two bubbles, and nobody in them really listens to the other.
The first visit. At the tasting Martin travels „from France to Italy and back to Liptov": the barley-and-lamb soup is surprisingly good, but the mushroom risotto is really milk-rice with mushrooms drowned in balsamic („when you've no creativity, grab a balsamic reduction and splatter the whole plate"). Klobása dunked in the deep-fryer, flavourless strapačky, and above all „bryndza" pirohy in which the bryndza vanished: „If these are bryndza pirohy, then I'll eat my own shoes." Saša insists the filling is 80:20 in favour of bryndza, but weighed out, it's closer to 50:50. The hardest moment, though, came off-camera from the kitchen: Ivan blew up at Martin and called him a „prk of a c*".
The diagnosis. Martin names the root cause: the owners have „castles in the air in Bratislava" and are utterly detached from reality, Zuzka has distorted information because she isn't here day to day („a fart in the wind"), and Peťo is stubborn and „pig-headed". A restaurant can't be run remotely: there must be an on-site manager every single day. „You don't smell of the kitchen," he tells the owners; it's time to turn the page and move on. Either they turn the page, or he turns the car around and heads back.
The reset. Martin sits Peťo down to make homemade pirohy from a universal potato dough: in 20 minutes there's a homemade piroh, the filling „excellent", and even Peťo gives it „four thumbs up". Together with the owners they crunch the lunch-menu economics (30 menus a day × €9.20 versus the higher à-la-carte margin) and agree to trim the menu and pour the freed-up time into homemade, local products. Martin adds the open-fire oven as a treasure, €2000 from Tesco for ingredients and gifts; Zuzka temporarily steps into the daily-manager role until the family finds a permanent one.
New concept & menu. No rebrand, it stays a koliba, but „not like every other one around": Slovak classics in a more modern guise and with a zero-waste streak. Sheep cheese with sourdough and pumpkin jam, a Liptov lentil-and-klobása sour soup, baked-potato cream with crisps made from the peels, halušky with mushroom cream and pulled rabbit, confit duck leg with chestnuts, beef cheek, a meat-stuffed bun with horseradish sauce, homemade rezance. The hero is Peťo's podpecník/podplameník flatbread, „the best in the whole valley".
The big night. Service drags (orders sit for 17 minutes) and a wellness siphon fails on top of it. The biggest row, though, is over the podpecníky: Peťo's highlight never reached the tables, the menu cards weren't with the guests, and Peťo quietly welcomed it, because it meant „less work". It winds Martin „up like a corkscrew": „This is the thing that'll make you famous!" When the podpecníky finally go out, guests are thrilled („the best dish I've ever had"). Ivan, in Martin's words, pulled the handbrake and bit his tongue; in the end they „fought through it as best they could".
One month later. A month on there's a new daily manager, Andrea („Andra"), and Jakub has finally admitted his mother is a baker, who now makes the homemade pirohy, buchty and rezance, so „at last everything is made in-house". Martin tastes placky (crisp, nice), grilled sheep cheese (handsome outside but still firm and under-cooked inside), homemade bryndza pirohy („this is how I picture love on a plate") and the bun with pulled venison (the dough, though, over-proofed and far too heavy). The podpecníky are now selling and guests praise them.
Verdict: The restaurant has made „a very big step forward", and Martin openly admits a small piece kept them from his first-ever „Peťka", five knives. Two complaints broke it, though: the under-cooked sheep cheese and the too-heavy, over-proofed bun. That is exactly why they get 4 knives. Hats off, and „God protect you if you ease off".
