The restaurant & setting. Episode 4 takes host Martin to the centre of Košice, to Smokehouse, an American-style BBQ joint (pastrami, smoked ribs, pulled meat). The place's identity is smoke and fire: its own smoker and homemade smoked specialities.

The people. Owner and head cook Rasto Varchola (34) learned smoking in the USA (the south, around Tennessee and Virginia, from age 15) and later in Denmark, where he studied hospitality and gastronomy. But Rasto also has a primary job (he's a product manager in the food industry) and runs the place largely "in the evenings." Smokehouse hovers around break-even and is propped up by his other income and by his parents. The barmanager is Erik (who actually called Martin in; he's known Rasto for years and his fiancée Matilda works here). Matilda (27) is the head waitress, a medical student, originally from Poland and Erik's fiancée, and the heart of the whole place. The kitchen is staffed mostly by young women working alongside their studies: Sonja (24, there since the founding, 4 years), Anna, Sára, Máša, with Júlia from Kyiv helping out.

Why they called Martin. The reviews say it plainly: tasty food, but brutally long waits, up to 45 minutes. Under any rush the kitchen falls apart; a party of four gets their dishes 18 minutes apart.

The first visit. Martin orders a lot of food for four, all at once: a Big Boss Burger (with homemade pastrami), Smoky Garden Burrata, beef tartare, cheesy nachos, baby back ribs, a philly cheese steak. Service is extremely slow (a starter after 28 minutes). The food: the tartare "neither smoked nor offended," it lacks any smoke flavour; the nachos have unsalted cream and guacamole, only the mince has taste; the burrata is "killed" with no accompaniment; the ribs are dry and tough; the burger is over-breaded and drowned in mayo that kills even the homemade pastrami. Lots of good ideas, weak execution. Martin closes the place.

The diagnosis. The core problem isn't the ideas, it's the missing system. The kitchen is carried by young, mostly untrained women working around their studies, left to "flounder in the mud" with no leadership. And on the other side stands an owner-chef who studied gastronomy in Scandinavia yet doesn't run his own kitchen, pass on a system, or keep the place clean (cigarette butts, grime, a neglected smoker, the restaurant's very identity). The only one who clearly cares is Matilda: she offers to clean herself because she knows what a cleaner costs, and she breaks into tears at the sight of the dirty floor. That gets to Martin. He promises help: "either I raise you like a phoenix from the ashes, or stay as you are, but without my help."

The reset. They cleaned the kitchen until half past two in the morning. Martin has them cook everything to watch their workflow, and finds one word spoken in 40 minutes, no communication, no system. He pushes Rasto to lead, delegate and put emotion into it ("this craft is about fire"). He brings in equipment (Miro from gastrokuchyne.sk), adds €2,000 in vouchers, introduces checklists and a cleaning routine, and teaches them "zero waste." He even takes the team on a field trip to a professional Košice kitchen to feel how a real brigade works.

New concept & menu. The main change is the trimmed menu (~10 to 12 dishes) for a clear identity. The new/refined menu builds on their strengths: a Ruben Sandwich with the homemade pastrami, beef tartare with smoked mayo, a paprika-and-bean soup with cream, mac and cheese, a 6-hour slow-cooked dark beef rib with potato mash and coleslaw, and a three-combo (pork rib, chicken wing, beef brisket).

The big night. Suddenly the kitchen is alive: communicating, planning its "game for the night," and Rasto wakes up and starts handing out tasks. Martin also arranges a surprise: he reunites a family that had been apart (inviting Matilda's loved one to dinner). The floor runs beautifully: "I haven't seen a floor run this well in a long time." A rare successful night.

One month later. Košice; Matilda is "flying with happiness." They handled a packed Friday: even at peak, guests waited no more than 10 minutes for food. New system, rotating positions, clean and bright. They've added a dish they invented themselves (croquettes with pulled meat) and it pleasantly surprises Martin: excellent, well-seasoned, spicy. Tasting the "board of joy": the beef filet is now beautifully pink (not overcooked), the fries excellent, the homemade pickled veg a thumbs-up, the pulled meat lovely and tender; the ribs are nicely smoked with a good glaze, only the meat wasn't salted deeply enough (the mash saves it); the coleslaw is good; and the homemade pastrami leaves nothing to fault. Martin is satisfied with both the kitchen's process and its timing.

Verdict: From "floundering in the mud" came a kitchen with a system and a soul. Smokehouse is awarded 4 knives, and Martin gives the rating to the one who "lived through it all from the first moment," Matilda.
