The restaurant & setting. Episode 5 takes host Martin across the border, to Valašské Klobouky in the Czech Republic, about 15 minutes from Dubnica nad Váhom, right by the Slovak border. Café-bar Anděl combines a restaurant, a café/patisserie and, downstairs, a children's play corner called "Lumpárnička." The owner is Slovak, and over the course of the episode Martin rebrands the place to Angel Pizza Pasta.
The people. Owner Sixtin Chovancová (28), originally from Lučenec, does practically everything: cooks, serves, invoices, runs the place, all while pregnant and raising a roughly five-year-old daughter she barely sees (for months she's dropped her at kindergarten in the morning and come home to find her already asleep). Her husband Lukáš Stála is the company's managing director and "finance guy," but because the place loses money he went back to a corporate sales job and mostly returns to fix things and crunch numbers. Petr (34) is the head chef, a local boy, 13 years in the trade, trained in French and Italian restaurants in Prague, which is where the Italian leaning of the food comes from. The floor is run by Leona (24), Peťa (37, there from the start) and Staska, who runs up and down to the Lumpárnička.
Why they called Martin. It isn't about the people; it's the economics. The restaurant doesn't earn despite the enormous amount of time poured into it; Sixtin is exhausted and has no time for her family. They've tried all sorts of things; nothing stuck.
The first visit. Martin can barely find the entrance: poor signage (by day you only see "Café bar Anděl Pizzerie"; the "Restaurace Anděl" sign only lights up at night), a confusing entrance, an empty downstairs bar. He tastes the daily menu: tomato soup (good texture but weak tomato flavour), beef carpaccio served still partly frozen (a fault), a Caesar salad for a laughable ~€6.60 (wow value), pork tenderloin (cooked right, great for the price), pizza Diavola (one of the better ones), and the local speciality "pikantule": baked potatoes in a cheese sauce (béchamel, gorgonzola, smoked cheese); a calorie bomb that, despite the name, isn't spicy at all, and one Martin wouldn't order again. The food is generally good and cheap. The food isn't the problem.
The diagnosis. Martin names two things. First, the prices are too low to make any money. Second, the downstairs children's Lumpárnička is an "iron ball chained to your leg": not profitable, draining staff energy (someone has to stand down there alone) and dragging the whole business down. The fix: merge the downstairs and upstairs into one restaurant and turn more tables (from 60 to 90 covers a night). And Sixtin, who does literally everything, has to become the manager rather than a cook on the line, especially before maternity leave.
The reset. Martin takes the team on a trip to Bratislava (his hometown), where an Italian chef, Vincenzo, teaches them to make pasta; he also gifts them a pasta machine. He adds €2,000 in vouchers and a team-building exercise. In the makeover he warms up the downstairs and keeps the Lumpárnička as an optional, chargeable extra.
New concept & menu. Martin steers the restaurant toward an Italian identity: since they already do pizza and carpaccio, it makes sense to add homemade pasta, which lowers costs, sets them apart (nobody in Klobouky does good homemade pasta) and keeps prices affordable. This is where the rebrand to Angel Pizza Pasta lands too, with its own homemade pasta as the flagship.
The big night. The test service is a big success: full house, guests couldn't praise the homemade pasta enough ("this place has needed this for ages"), and service held up. Sixtin works as the manager, off the kitchen line (a rehearsal for maternity). A few slips (soup served before the starter, one off-concept dish), but the night went brilliantly. "A new destination has been born in Klobouky."
One month later. The place is alive: chatter, people, lovely smells (versus the emptiness before). Sixtin can now leave to collect her daughter from kindergarten (they've hired a new cook). They kept the concept but drifted a bit: of Martin's pastas only spaghetti carbonara remained; they added arrabiata and an anchovy pasta with panko crumb (Japanese, which doesn't belong in Italian food), kept an "Italian hamburger" (people refused to give it up), and added pricier steaks (sirloin 310 Kč, flank 390 Kč) with high input costs, a move away from the cheap pizza-and-pasta philosophy. Tasting: the mushroom soup is good; the pork tenderloin excellent (still a cheap €6.60); the sirloin fine, but its root-vegetable ragù is acidic (the tomatoes under-cooked); the pasta slightly over-salted; the carbonara well-seasoned but too heavy (needs a splash of pasta water); the anchovy pasta weak (no olive-oil flavour, the panko out of place).
Verdict: An empty, loss-making place became a living destination with its own homemade pasta, a real step forward, though the team has drifted a little from the lean concept. Anděl Pizza Pasta is awarded 3 knives.
