The restaurant & setting. Martin rolls into Raslavice in eastern Slovakia and is already shaking his head from the car: „Cukráreň, fast food, pizza… Aziashop, Red Rose, restaurant. Čo tu zase chce byť?" Red Rose isn't a restaurant. It's a whole complex under one roof: a lunch-menu canteen, a pizzeria, fast food, a café, a confectionery, a bar with billiards and table football, a bowling alley, and a big hall for weddings and parties. The place has been running for about eleven months, its name a rose that pays off later. Inside, Martin is greeted by a tray counter: „I expected a restaurant, and this is a cafeteria."

The people. The owners are husband and wife Vasile „Vali" Žugarivo (40), originally from Romania, and Michala „Miška" (30), who grew up right here in Raslavice. They met in England, he as a cook, she as a waitress, and to this day they find it easier to talk to each other in English. Vali runs the kitchen, Miška the floor and service; they have three children. The team includes cook Janko (grill and lunch menu), cook Patrícia, Katka on pizza, Milka who does „everything", and servers Mariana, Vierka and Táňa, fourteen staff in all.

Why they called Martin. The place is enormous and empty. Monthly costs climb toward €40,000 (€7,000 rent and utilities, €10,000 wages, plus goods and invoices), while the daytime lunch menu sells and the evening dining room sits empty. Vali is utterly burnt out, having sold his house in Romania to keep the business afloat, yet doesn't know who his customers are or how to move the place forward. Miška sums it up flatly: „We started with much more energy, but it dropped terribly, it's really going downhill."

The first visit. Martin takes the tray lunch menu and samples across the offering. The broth is thin „water" with no meat or vegetables, the brown „universal" sauce tastes of MSG and powdered soup: „my pink miracle has arrived", he deadpans. The meat is dry, the chicken roll desiccated, the fries soggy rubber, the pasta dissolving on the tongue, „it's already given up". The pizza has raw, underbaked dough. The only praise goes to the potatoes. Vali admits he sells roughly 80 meals a day and only fourteen à la carte across two shifts. Martin's verdict: „If you cooked food like this abroad, your doors would always be locked, because no one would come."

The diagnosis. For Martin the problem isn't just the food: Vali is „psychologically falling apart", a prisoner in his own business that has cut him off from his family. He works from seven in the morning to ten at night, seven days a week; he only sees his kids in the morning on the school run. The staff exploit his good nature („when I'm here everything's fine, I leave and everything goes wrong"), and Martin names it: „You're a hostage in your own business." The tension spills into the marriage. The strongest moment comes when Vali talks about his daughter who wanted to go shopping and there was no time, and Martin reminds him from his own experience: „There isn't enough money in the world to trade your kids for work."

The reset. Martin starts at the root: he brings in a group of locals from Raslavice who only know Red Rose from the outside, and has the owners listen to their honest verdict: it feels like a „cafeteria", a „canteen", „pub-like", not an evening restaurant. The counter at the entrance instantly tells everyone where they are. Martin draws a clear conclusion: keep the lunches downstairs exactly as they work, and turn the nicer upstairs floor into an evening space. Meanwhile he sends the family to an aquapark so Vali, Miška and the kids can rest for at least a day, and hands them €2,000 in Tesco vouchers.

New concept & menu. No full rebrand: the name Red Rose stays, „the roses belong to it", and what changes is the format of the upper floor into a finger-food / street-food pub you sit down in with a beer. Martin prepares a tasting of the concept: deep-fried cheese-stuffed jalapeños with a dip, fried cheese-filled pirohy, kale croquettes with remoulade, grilled bread with roštienka, onion and smoked mayo, confit duck in lokše with red cabbage, and to finish choux pastry with chocolate and raspberry plus traditional párance with poppy seed and plum jam. „Those pirohy are insane," the kitchen rules.

The big night. The upstairs evening model gets a trial run and it starts in chaos: half an hour before opening nothing's ready, guests wait downstairs on the terrace and the staff don't know about them. Martin erupts: „You have one single, last chance to turn your fate around." The kitchen, with Vali at the helm, suddenly „hums" and works, but the floor falls apart: the cook on the pass and Miška argue, even in English („You can't take 20 stôl, I need the f* time"), until Miška collapses: „I have no energy." Martin gets her back on her feet: a manager doesn't have to do everything physically, but has to walk it and check it. The food goes out in the end and the guests praise it: „I'm honestly surprised, because it's excellent."

One month later. A month on Martin returns and Vali is miraculously transformed: „that sad man has suddenly become someone who can smile". Upstairs now hosts events, the work is split between cooks and servers, and Vali dares his own creations: a pulled-meat sandwich with dressing and pickled cucumber. But the execution stumbles: there's so much barbecue sauce it „killed the taste of everything", and above all the floor still lacks energy. The girls move „bland", the atmosphere is flat, the dishes aren't being upsold. „A restaurant isn't only about good food, but also about a pleasant atmosphere."

Verdict: 2 knives. Martin awards Red Rose two knives: a reward for Vali's enormous human transformation and for a kitchen that finally works hard, but also a clear signal that service and atmosphere aren't yet where they need to be. „I think you can simply be better. And you have to be. If you want to survive, you have to."
