The restaurant & setting. We're in Rožňava in eastern Slovakia, at Kotoľňa Pub, open for about a year and a half. Owner Vašo fulfilled his dream of being „vo svojom" (his own boss): he bought an old building, rebuilt it with his own hands, and borrowed the name from its past, it is a former boiler room (a „kotolňa"), so that is what he kept it as. The odd decor came uninvited: the night before the opening, someone splashed the facade with motor oil. „Bolo mi síce do plaču, ale ľudia mi vraveli, že je to pekné" ("I almost cried, but people told me it looked nice, so I shouldn't remove it"). So it stayed. The whole renovation was financed by two mortgages, two consumer loans and the sale of a flat, plus loans from his mum and sister, „beriem to ako rodinné dielo" ("I see it as a family's work").

The people. The boss and operator is Vašo (Václav) Hranek, self-taught in gastronomy and determined to do everything himself. It was cook Norika who called Martin, a trained car mechanic who spent twelve years as a shop assistant and now runs both the kitchen and the floor. The team includes pizza maker Peťo, waiters Števo and Žofi, and Vašo's ex-and-current partner Iva, with whom he has a daughter, „máme takú talianskú domácnosť" ("we have a sort of Italian household"). The whole staff says the same thing: „On si nás necení, sme preňho len jedna výroba peňazí" ("he doesn't value us, we're just a money-making machine to him"). Vašo is in the place from eight in the morning until two or three at night, cleaning, ordering stock, and nobody but him has a key.

Why they called Martin. Norika called Martin because Vašo trusts no one and won't let anything out of his hands. „Keby sa nedaj Bože niečo stalo, my nevieme bez neho vôbec fungovať" ("if, God forbid, something happened, we couldn't function without him at all"). The boss feels irreplaceable, working as cook, waiter, barman and cleaner, then complains that he always has to be there. The staff feel unappreciated and underpaid, the relationships in the team are strained, and the whole thing spins in circles through endless arguments.

The first visit. Martin sits down in a near-empty restaurant at lunchtime and is immediately struck by the prices: pickled sausage €2.20, fried cheese €4.50, bryndza halušky €5.90, a „ľudový" steak for €8.90. „Akoby som sa vrátil pätnásť rokov dozadu" ("it's like stepping fifteen years back; you should rename Kotoľňa to a cheap pub"). The menu is grubby and the plate is heavily smeared with fingerprints. The soup is a powerless broth with alphabet letters. The pasta is so overcooked „že ich požuje aj batoľa" ("even a toddler could chew it"), and it is written as spaghetti yet served as tagliatele. The meatballs taste like a convenience product, „polotovar s polotovarom" ("semi-finished on semi-finished"). Only the pizza, the €5.90 burger and a juicy steak save the day. „Objem neznamená kvalitu" ("volume doesn't mean quality"), Martin concludes over a table piled with €55 of food.

The diagnosis. Martin names the root straight to his face: the biggest obstacle is Vašo himself. „Jednoduché veci, ktoré vyžadujem, sa neurobia" ("the simple things I ask for don't get done, nothing is kept to, not the weight, the temperature or the portions"). He secretly brings in guests he invited himself, to see how the kitchen copes under pressure, and watches each side blame the other. „Nemôžete byť v robote a chodiť po kuchyni a len kydať jeden na druhého" ("you can't be at work, wandering the kitchen and just slagging each other off"). He lays his cards on the table: „Tento bordel, to ste vy" ("this mess is you. First clean up the relationships between yourselves, then we'll see whether anyone even cooks on Wednesday").

The reset. The next day they tackle the inventory, and it reveals a disaster: badly wrapped, freezer-burned meat, smoked meat stored frozen, pork neck three months old, piles of expired food. „Vyhodil si zhruba sto eur, mohol si ich dať ľuďom" ("you threw away about a hundred euros that you could have given the staff"). Vašo is a shopping addict who buys 300 kilos of flour and dozens of litres of oil on sale, in advance. Martin opens a €3.90 baguette to show the real maths: cost around 90 cents, profit nearly three euros, and explains the buy-times-three rule. „Máš nízke ceny a nechodia ľudia" ("your prices are low and people don't come; the competition's prices are high and people go there"). Gastrokuchyňa.sk supplies a new six-burner stove, a sous-vide unit, a vacuum sealer and cookware, plus €2,000 for groceries from TSK.

New concept & menu. No rebrand, just clear pricing and honest dishes you can't get elsewhere. Martin pre-cooks the inspiration: Czech „švejkovky" (a toast with garlic, mustard and a fried egg), potato pancakes with cheese cream, a beetroot „borš" in the style of borscht, chicken hearts in cream with a Karlovy Vary bread dumpling („nulová strata" ("zero waste, you use up the old bread")) and fried dumplings that, on the Bratislava-to-Košice run through Rožňava, simply have to be there. „Ľudia neprídu za najlacnejším kolenom, ale za tým, čo si nikde inde nedajú" ("people don't come for the cheapest pork knuckle, but for what they can't get anywhere else").

The big night. The test starts well, guests praise the starters and the team works as one for the first time, but a single stumble on the floor sets off an avalanche. Orders get mixed up, desserts go out before mains, cutlets and knuckles go missing, and Norika panics and storms out for a cigarette. „Prečo potápaš tú reštauráciu? Títo ľudia tu od rána makajú" ("why are you sinking this restaurant? These people have been grafting since morning"). Martin calms her, the team gets back into rhythm, and in three hours they put out 250 portions, more than ever before. Norika apologises for her outburst, Vašo admits „v živote sme tu nemali toľko ľudí" ("we've never had this many people"), and Martin leaves saying the team is still fragile but has set off on the right foot.

One month later. A month on, Martin returns to a full restaurant but immediately senses it is „trošku zriedená" ("a bit thinned out"). Peťo left for the competition on the main square, they ran a month without a single full shift, and it wore everyone down. The food has slipped back: the švejkovky are still excellent, but the špecle are smothered in half-melted cheap cheese instead of cheddar, „chuť jak umelá hmota" ("a taste like plastic"), the borš has no trace of beetroot or colour, and the chicken hearts are a curdled, flour-thickened mass. „Potlačím to vidličkou a ostane mi krásna rovná stena" ("I press it with a fork and a clean flat wall stays standing, mamma mia"). Vašo admits he only assisted with today's dishes and the staff rejected most of his advice. Relations are still strained, Norika turns up two hours late, „rešpektuje ma? Nie" ("does she respect me? No").

Verdict: Martin doesn't hide his disappointment. They mastered the pricing and will make money off the menu, but the flavour and the heart have drained out of the food, and Vašo's team never really grasped what he wanted from them. „Potrebujem, aby to jedlo bolo chutné, dobre urobené, urobené z lásky" ("I need the food to be tasty, well made, made with love, and they'll still have to work on that"). The score reflects how the people prepared themselves, not the cooking Martin showed them. He hopes Kotoľňa finds its customers. 2 knives.
